Lentil Soup

everyone, today I will represent to you Lentil
Soup, the first recipe for dishes that are related to Ramadan
Sorry
for being late 😞but the first days of Ramadan were tough... especially since
this is my first Ramadan during work in a full-time job.
Lentil
Soup is one of the essential Ramadan
dishes, it is one of my favorites, to be honest, so my mom has to do it like every
day, it is considered a side dish but it has to be on the table
Let
me explain a little bit more why it's important when we break our fast we break it by eating date and soup
and drinking some water, after that, we
start with the mine meal, so that’s why.
Without further ado let's hit the
recipe
Ingredients:
1. 2 bouillon cubes (you don’t need them
if you have chicken stock)
2. 3 medium-sized zucchinis
3. 2 medium-sized carrots
4. One medium size onion
5. A cup and a half of red lentils
6. 6 cups of water or chicken stock
7. 2 tablespoons of Olive oil
8. A quarter teaspoon of cumin
9. A teaspoon of salt
10. Lemmon (VIP)
11. parsley
How to make it:
1. Cut the onion into small pieces, In a stockpot, add olive oil, turn the heat to low medium, then add the onions, stirring occasionally, until the onions are soft and golden
2. While
waiting, peel up the carrot and zucchini then cut them into medium pieces.
3. Cheek on
the onions, if it soft and golden add the carrot and zucchini, and stir for 2 min then add 2 cups of water and one bouillon cube (you can use chicken stock instead of water and bouillon cubes), and let it simmer on medium heat until they are soft (keep your eye on the water level) when
they finish, we are going to then let them cool dawn so we can put the veg in a blender and blend them with lentils for a creamy texture
4. Rains the red lentils, in another stockpot, add the red lentils, 4 cups of water, one bouillon cube, and A quarter teaspoon of cumin, let it simmer on medium heat until they are soft, from
20-30 min (if there are any
white foam forms, remove it), and once it done we let them cool dawn,
and put in the blender with the vegetable and blend them together.
5. Then let them simmer for 10 min.
6. You can serve it with parsley and a large squeeze of Lemmon (the more the better), Enjoy !!!
